Paremmat banaanipannarit

Meillä pidetään paljon pannareista, mutta eihän niitä voi ihan joka päivä syödä. Onneksi myös hieman terveellisemmät kananmuna-banaanipannarit tekevät meillä hyvin kauppansa. Niihinhän tulee yhtä muussattua banaania kohden kaksi munaa. Mielestäni ne kuitenkin vaativat hieman lisää kuohkeutta ja usein tytöt toivovat mustikkapannareita, mutta jos mustikat lisää taikinaan, vaikeutuu pehmeän taikinan kääntäminen pannulla. Olenkin nyt hienosäätänyt banaanipannareiden taikinaa.
Muussaa kypsä banaani haarukalla tai perunasurvimella, mutta ei ihan hienoksi mössöksi. Sattumat antavat pannarille rakennetta. Vatkaa munien rakenne rikki ja lisää hyppysellinen leivinjauhetta. Lisään myös myös hieman kanelia ja mustikoiden kanssa mielestäni ihan mahtavasti yhteen sopivaa kaardemummaa. Sotke ainekset keskenään ja paista pikku pannareita toiselta puolen mm. kookosöljyssä. Lisää mustikat letuille juuri ennen kääntämistä. Jos käytät isoja pensasmustikoita voit leikata ne kahtia ennen lisäämistä. Näin lettujen rakenne pysyy hyvänä. Kuvissa näkyvässä aamupala smoothiessa on kiwiä, päärynää, avokadoa ja mantelimaitoa.
My kids love pancakes but obviously we can not eat them all the time. Luckily they also like the healthier option of banana & egg pancakes. I always feel like adding blueberries to them but they never quite flip over so well if the berries soak up the batter. So I did some research and upped the two ingredient pancake game a little. Just fine tuning. They are still easy and healthy but just a tad better. The basic ratio for banana & egg pancakes is one ripe banana to two eggs. Mush the banana with a fork but leave some little chunks for texture and extra fluffiness. In another bowl whisk the eggs and add a pinch of baking powder. It gives the pancakes that extra fluff these often lack. I also add cinnamon and if I´m adding blueberries then also cardamon ( those flavours go so well together). But don´t add your blueberries yet. First fry the little pancakes form one side in ( coconut) oil and before flipping them over add the blueberries on top. If you are using bigger bush blueberries then you may want to cut them in half first. We served these with extra blueberries and some organic maple syrup & smoothies made of pear, kiwi, avocado and almond milk.

Pancakes are the best and a very healthy breakfast or snack for kids and adults 🙂 I have been making pancakes for over 20 years on a weekly basis…and in my opinion they are super healthy with just the right balance of protein, carbs, fiber etc.
Here is my current favorite recipe: mix to eggs and add roughly 1,5dl of any natural / greek yogurt. Mash a ripe (large) banana and add to the mixture. Add one tsp of natural vanilla essence. In another bowl, mix roughly 1,5-2dl of wholemeal flower (probably any other healthy flower will do as well), 1 tsp of soda, 1 tsp of baking powder and a little bit of cinnamon. Gently fold the dry ingredients into the wet ingredients to make an even batter. Fry 3-4 pancakes at a time on a large frying pan with little bit of butter, coconut oil etc. (should make 7-8 large pancakes).
No sugar etc. needed at all, but if you want you can add a small nob of butter of top the pancake when serving and a tsp of maple syrup. They are delicious even without anything on top and can be taken along as a cold snack as well. Fresh berries on top are great as well.
If you want more variety, you can add fresh blueberries into the batter or fresh spinach to make a lovely green color (put spinach and yogurt into a mixer before adding to the wet ingredients). These will be Dinosaur Pancakes 😉
The pancakes can be stored in the fridge at least until the next morning (just heat them for 30s before serving) and probably they could be frozen an well? A very quick breakfast in the next morning!
