Tomato & lentil soup

I have not really been cooking that much lately as my kitchen is getting quite empty. We have been ordering in and buying our favourite ready made meals ( Herkku Food marketin omat valmisruokaosaston pinaatti- ja porkkanaletut ovat päässeet suosikkien listalle, me lämmitämme ne kuivalla paistinpannulla, paistamiseen ei tarvitse lainkaan voita koska ne ovat itsessään jo melko rasvaisia. Ja Kokkikartanon lohilaatikko on yksi meidän lasten suosikki valmisruoista.)  But today I decided it was a necessity to make myself a lunch that was nourishing and delicious as I need to be on top of my game and not just hungrily throwing stuff in boxes with not so delicate gusto. It was super easy, fast and delicious so here is my first recipe for 2019. The year I promised more recipes. It is as all my recipes, very versatile as you can add any kind of spices to it and different herbs too to make it with a bit of a Mexican twist or Italian perhaps.

Tomato & lentil soup 

1 can of tinned tomatoes ( you can use flavoured ones like onion & garlic)

1 can of lentils

1-2 onions chopped

1-2 cloves of garlic

1 dl oat cream

salt & pepper

( desired herbs like basil, parsley, cilantro  and spices like jeera, smoked paprika or cayenne pepper etc.)

1. Sautee the onion and garlic in some olive oil.

2. Add the tomato & lentils and some water as you rinse out the tomato from the tin.

3. Add desired herbs & spices.

4. Add the oat cream ( or regular cream).

5. Let it simmer for a few minutes and then blitz it in a food processor or with a Bamix.

Enjoy your soup hot or cold, perhaps hot on these cold days. This portion serves 2-4 people depending on how much you eat. I would say maybe two adults or one adult and two smaller kids.  But it is an easy recipe to double. It is a very fast, affordable, easy, quite nutritious and certainly a pretty light soup. No gluten ( check your oat cream label or use regular), no refined sugar and vegan. I did write “can” in the recipe but obviously if you find it it´s better to buy the tomato & lentils in a box that they sell at the same department as cans or recycle your cans properly. This soup also heats well so it´s a great choice for a lunch to take to the office.

Suosikki Ninni ja Nestori astiat ovat Nona K´sta. Tiedän, että tytöt alkavat olla jo aika isoja käyttämään melamiiniastioita ja usein heille katetaankin ihan samat lautaset kuin meille aikuisillekin, mutta nämä nyt ovat aivan erityisen suloiset joten niistä olisi vaikea luopua. Sitäpaitsi ne näyttävät mielestäni ihan oikeilta astioilta.

Minäkin ostin Nona K:sta Ninni & Nestori lusikat lapsille ja lisäksi kaksi ihanaa Livlyn lusikkaa. Mutta huomaankin käyttäväni niitä itse. Syön nimittäin melkein joka aamu maustamatonta jogurttia ja jos sitä syö metallilusikalla, niin se metalli jotenkin maistuu. Käytän siis noita lasten lusikoita ja ne ovat myös niin kauniita, että piristää aikuisenkin päivää kummasti. Täytyypä tehdä tuota keittoa joku päivä. Meillä Herkun valmisruokatiskistä lasten suosikkeja ovat kasvispyörykät sekä selkaiset ihan pienet bataatti-kvinoa pyörykät.

Hi Sofia. I have made a very similar recipe to this since my eldest was a baby. It is his favourite comfort food. I often add a pinch of paprika and cumin to give it extra flavour or a bit of sweet potato or roasted red pepper for another flavour. Just add crusty bread! Delicious!

Helen, it´s such a good and versatile recipe. My kids favourites are the fresh pea soup and the ginger, coconut & sweet potato soup I have shared on the blog previously.
