Blueberry muffins by kids

Last year ( or was it the year before that, I seem to keep loosing the track of time lately) I bought the Donna Hay Basic to Brilliance kids cook book. We love it, so many great ideas. I have written a whole blog post about cooking with children ( again) but it is still waiting for pictures. But instead I will now share this muffin recipe that we actually turned vegan. It is a very simple but yummy recipe easy enough for your kids to make. They are called a “lunch box surprise” in the book and would definitely work as a snack.
Blueberry muffins
1 cup all purpose flour
1 cup spelt flour ( or you could just do two of the regular if you´d like)
1 tbls baking powder
1 tsp cinnamon
1 egg
1 tsp vanilla extrackt
2/3 cup ( 160 ml) oil
3/4 cup ( 180 ml) maple syrup
1/3 cup ( 80 ml) milk ( or oat milk as we used)
2 1/2 cups blueberries ( frozen are fine too)
1. Preheat the oven to 180°c. Line a 12 capacity muffin tin with paper muffin cases.
2. Mix the dry ingredients in a big bowl.
3. Whisk the wet ingredients and the egg in a jug.
4. Make a dent in the dry ingredients and pour the wet in the dent and mix until just well combined ( do not over mix or you´ll end up with chewy muffins). Gently fold the blueberries in.
5. Spoon the mixture in to the tins and bake for about 25 minutes.

Fall style

It has been a bit gray in the mornings so I think it´s safe to start talking about fall style. Have you had a look online for any new styles or do you go by ” we need this upgraded”. I still have to go through the girls closets as I think I will find plenty there that just does not fit anymore. Yesterday morning Bubble Gum ( they dress themselves nowadays) came out of her room in a long sleeved t-shirt and let´s just say the sleeves were not long anymore. So the sell & donate piles are being made here very soon. It´s also useful as then I get a feeling as to what we have that does fit and we don´t forget something cute at the end of the closet so to speak.
What I know we do need a new pair of is wellies, rain boots. This year we are trying the Aigle lollipops that I think look very cute and classic. I obviously would love them in yellow, I think yellow looks so bright and cheery on rainy days but my girls love their pink ( still). For Fall coats and jackets we have the very basic navy Uniqlo lightweight down jackets and the trench coats from Polarn o Pyret we got last Spring as gifts. They are very versatile and work on rainy days too. And the girls have their Ver de Terre jackets and pants too. I bought one cute pink on sale in the summer but we got navy blue pants with that as the light pink pants need so much washing. They are good for the second grader for after school ” club” where they are playing outside and for the 4th grader on sports days outside if needed. Then we do have the Petit Bateu rain coats too.

Pretty dresses

Hi! Oh it´s been a while since I opened my computer! But now the kids are at camp and I decided to take a little break from organising our things and say hello. I hope your summer has had a wonderful start. Ours could not have been better, except if we had a little less unpacking and a little more island hanging. But I´m not complaining as putting our belongings where they belong is the best part of renovation and moving. If only I had a few things less. But they are all so lovely I can´t seem to be able to part with them either.
Anyhow, I met up with the lovely Katarina of Nona K. at her new shop location at Kasarminkatu, a stone throw away from Esplanad park ( mostly her hand maid treasures now a days which is good because it is what I loved best about her previous store anyway) and she gave the girls the loveliest midsummer dress and skirt. Such perfection! You can find ready made ones in her store or you can order one in your kids size from her ( she makes them in like a day). I also ordered the prettiest yellow Liberty Betsy summer dress ( in next years size so we can use it for a few summers in a row) and am looking forward to seeing it on the girls when it´s ready. Here are the loveliest checkered items! A summer must have!
